Every day we receive fresh whole salmon, supplied directly from our partners in Norway. Just two days after having been slaughtered, chilled and packed the full load trucks arrive at the factory in Urk. A thorough inspection of the incoming fish is the foundation of our quality product. After a first sensory control at the entrance the quality department inspects each shipment on microbiological condition before the salmon is cut into 2 fillets by modern filleting machines. Afterwards these fillets are trimmed by hand on customers specifications and can be cut by means of laser techniques into portions with exactly the right weight.
